What should a labelled plant cell diagram include?

The standard set: cell wall, plasma membrane against its inner face, large central vacuole with tonoplast, nucleus with nucleolus, chloroplasts with thylakoid stacks, mitochondria, rough and smooth endoplasmic reticulum, Golgi apparatus, ribosomes, peroxisome and plasmodesmata. The generator includes and labels all of them by default — ask for a simpler subset if you need one.

How is this different from a generic AI image tool?

The subject knowledge is built in. Why does the vacuole take up half the diagram?

Because it does in the cell: a mature plant cell's central vacuole commonly occupies half or more of the volume, pressing the cytoplasm and organelles into a thin layer at the margin. A diagram with a small vacuole floating mid-cell is drawn from other diagrams, not from cells.
